While Tex-Mex and Cal-Mex dishes borrow some of the flavors and ingredients commonly found in Mexico, authentic Mexican cuisine goes far beyond tacos and burritos. Tamales are the most common "wraps," and pozole, a hearty pork and hominy soup, is one of the country's most popular dishes. Genuine mole (sauce or gravy) recipes can contain nearly 30 ingredients and cook for two days. Few dishes in Mexico do not contain chiles, and some of the fieriest food in the world can be found in authentic Mexican kitchens.
